Having honed his skills in some of Australia’s most acclaimed restaurants – such as Rockpool, Amaru and Lûmé – John currently holds the title of S. Pellegrino Young Chef Pacific 2018, where he eventually placed 5th overall in the global competition. This year, he has returned to South Melbourne’s Lûmé as Executive Chef where contemporary Australian cuisine is integrated with his Filipino heritage. @j_hnrivera
