When Three Blue Ducks opened up in Brisbane, there was a huge sigh of relief that lovers of real food didn’t have to drive to Byron to get their fix. Sustainable, ethical, paddock-to-plate cuisine was being served with a side of chilled out, laid back coastal attitude, right in the heart of Brissy’s ultra-luxe W Brisbane hotel. Now Darren Robertson, Mark Labrooy and Andy Allen, three of the co-owners of Three Blue Ducks, are inviting you to sample the best of Byron to Brisbane with this Good Food Month exclusive event.
The team have curated a menu that exemplifies Byron to Brisbane, and showcases the region’s very best producers. As part of the Three Blue Ducks involvement with the Australian Marine Conservation Society’s Good Fish Project, you can also expect sustainably sourced seafood. The bar will be slinging some oh-so Byron cocktails, while their favourite DJ will be on the decks. Darren is one of Australia’s most celebrated chefs, having initially trained in the UK at the Michelin starred ‘Gravetye Manor’. He then moved to Australia, eventually taking the helm of the then three-hatted Tetsuya’s (Sydney), where he fatefully met Mark Labrooy. Mark and Darren appeared together as guest chefs of MasterChef, and it’s here that they met Andy in 2012. They remain a tight team today, sharing the philosophy that cooking with good mates, while enjoying nature and putting a smile on people’s faces, is always the winning recipe.
