Fire at Dusk with Lennox Hastie and James Viles

Lennox Hastie, of two-hatted Sydney restaurant Firedoor, will be turning up the heat as he takes over the kitchen at Pialligo Estate. It’s a red-hot line up of chefs as Hastie will work alongside award-winning chef James Viles (of two-hatted Biota Dining) at Pialligo Estate. You’re invited to their sizzling 4-course fire-cooked dinner, with matched wines, served with an arrival canape and cocktail.

Hastie is Australia’s foremost fire-chef, having honed his wood-fired grilling craft over the asado (open fire-pit) at Basque’s Asador Etxebarri, a Spanish restaurant voted 6th best in the world in Restaurant Top 50 Awards 2015. Adding fuel to the fire is Viles, whose groundbreaking Biota Dining is currently ranked 46 in Australia’s Top Restaurants, and who hosts a barbeque every Sunday on the restaurant’s parklands. Despite the string of high-end awards, Viles is a grassroots chef who recently opened Barn by Biota – the wild sibling of his fine dining restaurant. Set amongst the elements, Viles takes his guests on foraging adventures followed by lunch at his much cherished, custom-built fire pit. Viles is the perfect pyre partner for Hastie’s fire feast.

Pialligo Estate kitchen, whose famous Smokehouse has taken out some of the biggest international culinary awards, including and back-to-back gold medals for Best Smoked Bacon in Australia (2014, 2015) at the Sydney Royal Fine Foods Awards.
