We’re kicking off Perth’s Good Food Month with an artful ode to Australian produce. Combining three of the restaurant world’s most talented minds in native-ingredient cooking, Matthew Sartori (Wildflower, Perth), Aaron Carr (Yarri, Margaret River) and Matt Blackwell (GOMA, Brisbane), this multi-course chef’s dinner in historic Moana Hall will change everything you know about seasonal eating.

Growing up in country Western Australia, Sartori has long been acquainted with food from the bush and how our environment changes throughout the year. The Wildflower menu is inspired by the six seasons of the Indigenous Noongar calendar; the Birak dry season creates an abundance of kangaroo and crocodile, while the cooler Djeran season means seeds and bulbs are put to plate.

With a similar respect for the land, Carr, who comes from an acclaimed 21-year tenure at Margaret River winery-restaurant Vasse Felix, focuses on sourcing sustainable and ethical produce from dedicated WA growers – think Mandurah sea mullet or Shark Bay pipis.

Over in Brisbane, the tattoo-covered Blackwell, who earned his stripes in the Michelin-starred UK kitchen The Man Behind the Curtain, takes the modern art on the walls of GOMA straight to his tables, with inventive, creative plates that make local produce the true hero. When he comes to Perth, expect a riot of colour and a dish that is unapologetically surprising.

With each restaurant boasting their own Good Food Guide 2020 hats, this is a multiple-course dinner that not only showcases excellence in fine-dining, but takes pride in the beauty and singularity of our nation’s bounty.
