With only six seats and a wait list of six months, Hakkoku is one of the hardest restaurants to get a reservation at in the world right now. A seat at the Sushi Bar at Hakkoku, served by Sato himself, will set you back ￥41,000 for 30 pieces of sushi ($544).
Together with Monty Koludrovic, executive chef of Icebergs Dining Room, we’re bringing Hiroyuki Sato to Bondi Beach. Good Food Month will transform Icebergs’ private dining room into the world’s most exclusive and authentic sushi bar, complete with one of the best views in the country. Seats are extremely limited, as we are holding two exclusive and intimate dinners that are limited to just twenty people per sitting.
Sato is one of Japan’s most lauded chefs. Prior to opening Hakkoku in 2018, Sato was head chef of Sushi Tokami, where he earned three Michelin Stars. A secret to Sato’s success is that he sources only the best seafood to work with, using tuna from Yamayuki Group in Japan, who are one of the most prominent suppliers in the world. Good Food Month will be partnering Sato with the best producers in the country so that he can express his art using Australia’s most premium ingredients.
