Olio, Sydney’s iconic Modern Sicilian restaurant, and chef Lino Sauro welcome chef Adrian Richardson – Owner & Head Chef of La Luna, Melbourne and co-host of the hit cooking show“Good Chef Bad Chef’ (on Network Ten), to bring you a collaborative gastronomic menu presenting the best of Australian and Sicilian cuisine.
When it comes to meat, Richardson wrote the book on it, literally, MEAT was released in 2008 and provided readers with a simplistic guide on how to buy, cook and enjoy meat. At his restaurant, La Luna Bistro, every cut has been dry aged, on the bone for 7 to 8 weeks and is butchered on the premises, “we actually use a lot of cuts that aren’t mainstream, so we’re using the whole animal in our own particular, strange sort of way.” He encourages people to “eat good meat, sustainable produced if you can, grass fed, animals that live a healthy life”.
Chef Lino Sauro comes from a long lineage of self-sufficient Sicilian farmers where he grew up with meals that were created with the quality produce grown on the property and from the neighbouring sea. If Sicilian cuisine is known for one thing, it is their seafood and how they hero the freshest, most seasonal produce- this strong connection to his Sicilian roots is reflected in his cooking.
