Join the current editor of Good Food Ardyn Bernoth and former Good Food Guide editor and Festival Director of Good Food Month, Joanna Savill as they invite Bill Granger, to explore the dishes of the last 20 years that influenced him, and changed the course of Sydney dining forever.

If it wasn’t for Bill Granger’s restaurants, bills, we might all still be eating greasy-spoon style bacon and eggs with white bread, slathered with margarine. Bill gave us a neighbourhood bistro that was at once earthy and welcoming, as it was minimalist, contemporary and stylish.

Bill’s empire grew steadily from his first cafe in Darlinghurst, opening a number of new venues for breakfast, lunch and dinner across some of Sydney’s best suburbs. From there he ventured into the UK, the US, Japan and Korea. Bill has written 11 cookbooks, selling over 1 million copies, not to mention the contributions he makes to magazine and newspapers throughout the world. He’s made 5 television series which have aired in over 30 countries. And a staggering 25 years later, you can still find a queue around the block every Saturday morning of people wanting a seat at bills.

Bill Granger changed the cafe scene forever when he opened up flagship site, Bills, in Darlinghurst in 1993. Granger hailed from Melbourne, but had come up to Sydney to study art. Instead, he found a passion for cooking, and using his predisposition for design, he created a light and airy, clean and minimalistic cafe, the likes of which we’d never seen before. Queues around the block have been there ever since.

Bill is a legend in the cafe and restaurant scene; a self-taught cook, restaurateur, food writer, and television personality. He travels between Australia and London, while also working internationally, and has restaurants in Sydney, Japan, London, Hawaii, and Seoul. Bill has 10 books under his belt, with his first two cookbooks, bills Sydney Food and bills food, both international bestsellers.
