This is an incredible opportunity to have lunch by chef Thomas Frebel, who was head of research and development at Copenhagen’s NOMA (four-time winner of the World’s Best Restaurant Award). He is now head chef and co-founder of INUA, Tokyo, which opened in June 2018 and which has already won the title of “Arrival of the Year” at the inaugural World Restaurant Awards. At NOMA, Thomas worked alongside René Redzepi for an astounding 10 years, and for Good Food Month, he will join top chef Clayton Wells for a residency at Wells’ two-hat Chippendale restaurant, Automata.
When Thomas spearheaded NOMA’s pop-up in Tokyo in 2015, the waiting list was 60,000 names long. For Good Food Month, you’re invited to join Thomas and Clayton in an intimate sitting of just 50 people. You’ll be treated to the finest in-season produce over a multi-course lunch, including wine and beer.
