The region of Provence is famous for its sunny weather, rugged harsh countryside, a love of food and wine.

Urbane Head Chef, Amelie Rabaud was born and raised in the town of Toulon and from an early age by watching and helping her grandmother she learnt to cook the classics that symbolise the area. Working at Christophe Bacquie (3 Star Michelin) she mastered her craft in Provençale cuisine.

Vive la Provence dinner is paying homage to this special region with a special 5 course degustation menu which showcases the true identity of Provence – truffles, olives, seafood and rose.

FIRST COURSE
Salade nicoise
Traditional salad from Nice
Mesclun, quail eggs, house made cured fish, cherry tomatoes, green beans, olives

SECOND COURSE
Petits farcis provencaux
Baby stuffed Vegetables, meat jus
Baby round zucchini, tomatoes and onions stuffed with a condiment and pork stuffing

THIRD COURSE
Risotto de petit epautre a la truffe
Fresh truffle pearl barley risotto

FOURTH COURSE
Bouillabaisse
Traditional Provencal fish soup “Bouillabaisse”
Saffron fish Soup cooked with different variety of fish, shellfish and potatoes

FIFTH COURSE
Calisson d’Aix en Provence
Traditional French candy of melons and almonds
