Head Chefs Dave Verheul and Ben Williamson of Melbourne’s Embla and Gerard’s Bistro respectively have come together to announce the menu for Brisbane Good Food Month’s Hat Swap. Hat Swap is the ultimate meeting of the minds and an unmissable event for any lover of food. The collaborative dinner includes 5 shared courses with matched wines and will be hosted at Gerard’s Bistro on the 27th of July.

So without further ado:

 

Snacks

Carrot, labne, yuzu kosho, advieh

Kohlrabi basturma, egg yolk, sweet sicely

Whipped cod roe tart, herbs de provence

Smoked duck liver parfait, green fig, potato

 

Shared

Snapper carpaccio, sour red peppers

Raw Paroo kangaroo, grilled hummus, fungus burghul

Raw beef, ginger, finger lime

Grilled cime di rapa, citrus, shallot, tuna heart, egg yolk

Skate wing, macadamia, shiitake, wattleseed

Chicken breast, custard, licorice, yeast

Onions stuffed with morcilla, charred onion broth, epoisse

Pork rack, burnt hazelnut, witlof, apple

Broccoli, lemon, sunflower seed miso
